Ingredients:

To make schezwan fried rice, you will need the following ingredients:

- 1 cup basmati rice or long-grained rice

- 2 tablespoons oil

- 2 teaspoons finely chopped garlic

- 1/4 cup chopped spring onion whites

- 1/4 cup chopped onion

- 1/4 cup chopped carrot

- 1/4 cup chopped french beans

- 1/4 cup chopped cabbage

- 1/4 cup chopped capsicum (green, yellow or red)

- 2 tablespoons sweet corn kernels (optional)

- Salt to taste

- 2 to 3 tablespoons schezwan sauce (see below for recipe)

- 2 teaspoons soy sauce

- 1 teaspoon vinegar

- 2 tablespoons chopped spring onion greens

Cooking Instructions:

To make schezwan fried rice, follow these steps:

1. Rinse and soak the rice in water for 20 to 30 minutes. Drain the water and cook the rice in a pot with salt, oil and enough water until it is al dente (cooked but not mushy). Fluff with a fork and spread on a plate to cool completely.

2. To make the schezwan sauce, soak 10 to 12 dry red chillies in hot water for 15 to 20 minutes. Drain the water and blend them into a smooth paste with some water. Heat 2 tablespoons of oil in a pan and saute 2 tablespoons of finely chopped garlic until golden. Add the red chilli paste, 1/4 cup of water, 2 tablespoons of tomato ketchup, 2 teaspoons of soy sauce, 1 teaspoon of vinegar, 1/2 teaspoon of sugar and salt to taste. Cook on low flame until the sauce thickens and oil separates. Store in an airtight container in the refrigerator for up to 3 weeks.

3. To make the fried rice, heat oil in a large wok or pan on high flame. Add garlic and spring onion whites and fry for a few seconds. Add onion and fry until translucent. Add carrot, french beans, cabbage, capsicum, sweet corn and salt and stir-fry on high flame for 2 to 3 minutes or until the veggies are crisp-tender.

4. Add the cooked rice and toss well with the veggies. Add schezwan sauce, soy sauce and vinegar and mix well until everything is well coated with the sauce. Adjust the seasoning as per your taste.

5. Garnish with spring onion greens and serve hot or pack it for lunch.
