Thandai Recipe Ingredients:
- 1 cup milk
- 1/2 cup water
- 1/2 cup sugar
- 1/4 cup almonds, blanched
- 1/4 cup cashews, blanched
- 1/4 cup pistachios, blanched
- 2 tbsp poppy seeds
- 2 tbsp fennel seeds
- 2 tbsp cardamom powder
- 1 tbsp black peppercorns
- 1 tbsp rose water
- A few saffron strands (optional)
- Ice cubes, for serving
How to make the Thandai - Step-by-step process:
- Soak the blanched almonds, cashews, pistachios, poppy seeds, fennel seeds, black peppercorns, and saffron strands (if using) in water for at least 2 hours or overnight.
- Drain the soaked nuts and seeds and grind them to a fine paste in a blender.
- In a saucepan, heat water and sugar over medium heat until the sugar dissolves completely.
- Add the ground nut and seed paste to the saucepan and cook for 2-3 minutes, stirring continuously.
- Add milk, cardamom powder and rose water to the mixture and stir well. Cook for another 2-3 minutes.
- Remove the mixture from heat and let it cool.
- Once the mixture has cooled, strain it through a fine sieve or muslin cloth to remove any grit.
- Chill the thandai in the refrigerator for at least an hour.
- Serve the thandai chilled with ice cubes, rose petals, and chopped nuts for garnish.
